Norwegian Butter Cookies

Long ago, back in 2019, I started this page in creating free, multicultural resources for homeschooling families. The sun set on that 4 years ago when my focus and direction began to shift. If I’m being honest, my decision to remove these units was met with an aching heart.

Recently someone asked about a Norwegian Butter Cookie recipe I shared in my very first unit study and I thought I’d share it will you.

Ingredients:

2 1/2 cups flour

1 1/2 cups butter

1/4 tsp salt

1 1/2 cup sugar

1/2 tsp baking soda

1 egg, beaten

2 tsp vanilla

Directions:

Preheat oven to 375

-In a large bowl whisk together flour and salt and baking powder

-With an electric mixer, stir butter until creamy

-Add in sugar, once mixed well, add egg and vanilla

-Stir flour mixture into sugar and butter mixture

-Roll dough into ping pong sized balls and place on baking sheet about 2 inches apart

-Firmly press the middle of the dough with thumb for a thumbprint shape or roll dough into a long tube and coil around for a swirl design

-Bake for 8-10 minutes

-Let set for 2 minutes and transfer to a wire cooling rack. These cookies are quite fragile so handle with care!

-Dust with powdered sugar and enjoy with a cup of tea, coffee, or hot

These cookies are simply delicious and easy to modify for a gluten free diet. They make a wonderful treat for Christmas (especially St. Lucia Day!)
